Pumpkin Spice Chocolate Chip Halloween Cookies

I am super excited to invite you to HALLOWEEN week! You may be slightly confused. Isn't HALLOWEEN   on Oct 31st and over a week away. I know.. I know... but I am guessing that you will most likely have parties on both  the weekend before and after HALLOWEEN, and because I care about you so much I want you to be prepared for both :)

So all week I will be sharing with you treats that I would take to my HALLOWEEN party and I am also going to include some songs each day that I would like to hear at my HALLOWEEN party. Every good party needs good food and good music!

I am starting out with an easy chocolate chip cookie recipe. I have a basic pudding chocolate chip recipe that I love to make. I feel a little guilty I haven't posted it for you yet. No worries its coming soon. Chocolate Chip week isn't that far away in the future :) I adapted this recipe once for my banana split cookies. Then again for this HALLOWEEN version.

So I found the special ingredients for this recipe at Walmart. I was super excited to see both because they are so FUN. I practically did a HALLOWEEN dance in the store.

So here are my HALLOWEEN songs for today. I hope you enjoy!

From one of Jim's favorite movies of all time - The Nightmare Before Christmas
This is Halloween - Danny Elfman listen to it here. Buy it here: This Is Halloween

Whenever I hear this song I have a flash back to Julie & Julia ...and the scene where she is killing the lobster.. and they sing Lobster Killer.
Psycho Killer - Talking Heads listen to it here. Buy it here: Psycho Killer (Remastered Album Version )

Ok this is probably most remembered from the SNL skit. More Cowbell!
Don't Fear the Reaper- Blue Oyster Cult listen to it here. Buy it here: (Don't Fear) The Reaper.

I'm a country girl at heart... so I had to add this one. Plus I still remember my live version of the devil went down to Jackson from our trip to Yellowstone.
Devil went Down to Georgia - Charlie Daniels Band listen to it here. Buy it here: The Devil Went Down To Georgia

So this is any oldie but a goodie... I think it should come back with all the new witch shows on TV lately...
Witchy Women - Eagles listen to it here. Buy it here: Witchy Woman

I'll share more of my favorite HALLOWEEN music on my posts on Tuesday and Thursday. For now lets get back to these cookies. They are are amazing and relatively easy to make... and everyone will love the fun HALLOWEEN twist you added to an old favorite.

 Ingredients:

2 1/4 cups flour
1 tsp baking soda
1cup butter, softened
3/4 cup brown sugar
1/4 cup white sugar
1 package (3.4 oz) package instant pumpkin spice pudding
2 eggs
1 tsp vanilla
1 package of orange and black chocolate chips

Preheat the oven to 350 degrees.

In a medium sized bowl combine the flour and the baking soda. Set aside. In a large bowl cream together your butter, brown sugar, and white sugar.

Add the pudding to the creamed butter mixture, and make sure it gets combined well. Then add in the eggs and vanilla. Once mixed start to add the flour mixture.

Finally stir in the chocolate chips. Drop the cookies in 3 Tbsp size round balls on the cookie sheet. I do 6 on sheet vs 12 to make sure that there is room for them to grow in the oven. Bake for 11-13 minutes.

This recipe makes 16 large HALLOWEEN cookies.

Eat and Enjoy!
