Little Snowballs
















We got more snow last night and it snowed all day today. It is also FREEZING. Like you really have to be careful and bundle up to not get frostbite freezing. However today I decided to not complain and embrace the snow. Going from one building to another today I was all bundled up and decided I would see if it was good packing snow. You know it was. I made a couple snow balls and threw them and they were perfect. Then I left work early to beat my husband home, so that I could snow blow the driveway.

















This really isn't a huge stretch since I have a secret love affair with our snow blower, Mr. Toro. If you have a good snow blower its actually quiet satisfying to clear the driveway, sidewalk etc. So in the spirit of the snow we have Little Snowballs today. Remember last week when I had to make something for the hubby's potluck at the last minute. Yup I made these beauties. They are so easy to make and they don't take any crazy ingredients.

















I also love these cookies because they are so versatile. You can put them on a fancier Christmas plate like the one in the top picture. They will then look very elegant and they are just the right size to be a bite-size snack. They can also be a causal cookie if you want to put them on a fun plate like the tree shaped one. Lastly they would be great to put in ramekins so you could put 3 on a large table and people could get one or two or three without have to reach too far.

So embrace the snow with me. Throw a snowball or eat a snowball, and dream of manly snow blowers.

Ingredients

1 1/2 cups melted butter
3/4 cup powdered sugar
1 1/2 tsp vanilla
1/2 tsp nutmeg
1/2 tsp salt
3 1/2 cups flour
1 cup finely chopped walnuts
Additional Powdered Sugar for Coating

Preheat the oven to 350 degrees. Melt the butter in a large mixing bowl in the microwave. Mix in the powdered sugar. Add in the vanilla, nutmeg and salt and mix them into the mixture.

Add the flour in 1 cup increments, mixing well between each addition. Stir in the nuts after all the flour has been added.

Form one inch balls out of the batter. Bake them for 10 minutes. While they are baking pour powdered sugar into a small bowl so that you can roll the cookies in it.

Let the cookies cool for 2 minutes after coming out of the oven and then roll them in the powdered sugar. It is important that you do the first roll when the cookies are still warm. Wait for the cookies to cool completely (about 10 minutes) and then do a second roll. The second roll is crucial to keep a nice powdered sugar coating on the cookies.
