Readers... I would like to introduce you to my old dear friend Chocolate Pudding Cake. We have know each other almost as long as chocolate chip cake. I love them both for different reasons, but mainly because they are chocolatey and delicious.
The cool thing about this cake is it looks semi normal when it comes out of the oven.
But then you take out the first piece... and you realize that the cake is sitting in a whole layer of hot fudgey pudding goodness...
You know what you do with that goodness... .You put it on top of the cake....
Do you know what you do then? You put on whipped cream... that melts just a little bit.....
Then you know what you do.... You eat it... and you become very happy....

Ingredients
Base
1/2 cup sugar
1/4 cup cocoa
1/4 tsp salt
1 2/3 cup boiling water
Topping
2 Tbsp melted butter
1/2 cup sugar
1 tsp vanilla
2/3 cup flour
1/4 cup cocoa
1 tsp baking powder
1/2 tsp salt
1/2 cup milk
1/2 cup oats
Preheat the oven to 350 degrees.
Put the kettle on the stove to start boiling the water. Then start making the topping. Put all the ingredients in a large bowl: melted butter, sugar, vanilla, flour, cocoa, baking powder, salt, milk and oats. Mix it all together with a large spoon by hand. Everything should be well combined, but you will not need to over mix.
In the bottom of the 9X9 pan put the dry base ingredients: sugar, cocoa, salt. Mix them together in the base of the pan.
Add the boiling water to the 9X9 pan.
Divide the batter into 9 globs and put them into the pan. These will become your predetermined cake pieces.
Bake for 45 minutes.
Serve warm with vanilla ice cream or whipped cream.
