Apple Glazed Cinnamon Roll Muffins

















Ok I have to admit something... Deep Breath.... I'm afraid of cinnamon rolls. I am seriously afraid to bake from scratch cinnamon rolls. I made a batch once from a site I trust for recipes and they did not turn out. Jim actually DIDN'T finish them and Jim finishes EVERYTHING. I emailed the blog owner and I didn't get much help... So they have gone on the wayside.

So since then we have lived a cinnamon roll free life. Well I have to admit not a totally cinnamon roll free life..that would be crazy.  We eat the ones at the local bakery... and my mom's cinnamon rolls. We eat lots of those because they are amazing.





















Mom you need to teach me how to make cinnamon rolls!  However until then you know what I will do... I will make these... and I will LOVE them.

I will love them because the sugary Apples and Apple Glaze just MELTS in your mouth!

I will love them because they are EASY to make!

I will love them because they are in made in a muffin pan that is just FUN!

I will love them because I will remember that Jim and I ate all of them at 4:30 in the afternoon, and LAUGHED because we didn't have room for dinner!

Ingredients

For the Muffins
1 apple diced into 1/2 inch pieces
1/3 cup chopped walnuts
1/4 cup brown sugar
1 tube of refrigerated cinnamon rolls

For the glaze
5 Tbsp apple juice
1 Tbsp of powdered sugar

Preheat your oven to 400 degrees. Spray the bottoms of a six muffin pan with spray butter.

Combine together the diced apple, walnuts, and brown sugar. Divide the mixture equally between the different muffin cups. Put one cinnamon roll in each muffin cup cinnamon side down.

Bake for 15 minutes. Allow the cinnamon roll muffins to cool 5 minutes. Flip them over and shake gently until the muffins come out. Make sure and have a plate ready to catch them.

Combine the apple juice and powered sugar in a small bowl to make the glaze. Add more juice or powered sugar to get the consistency that you want.

Glaze the cinnamon rolls and enjoy!

  1. I love that you added apples to cinnamon rolls! When I make them from scratch, I have a problem with them cooking all the way through. I like them, but my family doesn't love them when they're doughy in the middle. Eventually I bet will both be able to make them from scratch, but until then this will be a great substitute!

  2. Cinnamon rolls are my love, I would hug them if I could but that gets very messy. I love your apple spin on this, wishing I had a tray for breakfast right now! :)
